There’s a reason this one dish- easy peasy dish went viral, it’s delicious and SO QUICK AND EASY To make!

We have changed it up a little – the original used regular feta cheese ( You can definitely still do that – this Persian feta is the BOMB!)

We also made it gluten free using this pasta!

FUN FACT: This recipe was originally created by a Finnish blogger name Liemessa and recreated in English by MacKenzie Smith of Grilled Cheese Social. Her version went viral on the TIkTok App. There’s tons of versions out there. They all center around pasta, tomatoes, and feta in a casserole dish for a super easy and delicious meal.

Vegan Feta from Cook and Baker

1 tbsp nutritional yeast

2 ½ cups organic red cherry tomatoes


2 tbsp extra virgin olive oil

2 cups GF pennecooked, drained

1 handful spinach or basil

Salt and pepper to taste

Preheat the oven to 180C
Add the tomatoes to a baking or casserole dish, along with a drizzle of olive oil and salt and pepper. 

Pop the vegan cheese in the middle, and top with more salt and pepper. 

Pop in the oven for 35 to 40 minutes, until the tomatoes have bursted.

Stir with a spoon until the tomatoes and "cheese" meld together, and add a handful of spinach into the mix. 

Pour in the pasta, and mix until coated with the sauce. 

Enjoy with more freshly cracked pepper and red chili flakes.
