Matcha Delight BY HELEN

This is not your average chia pudding. Infused with antioxidant-rich matcha and a hint of vanilla, then topped with melted white chocolate and vibrant fruit, this dreamy green bowl is a love letter to your heart and taste buds. Whether you're making it for breakfast, dessert, or an afternoon pick-me-up, each bite is a celebration of colour, texture, and plant-powered goodness.

INGREDIENTS

5 tsp chia seeds
1 cup almond milk
50g white chocolate
2 tsp cacao butter
2 tsp matcha powder
1 tsp honey
1/2 vanilla syrup
strawberries
blueberries
banana
mango
toppings of your choice (I used granola, mixed nuts and seeds, goji berries)

METHOD

Make the Chia Pudding:
In a glass or bowl, add chia seeds. In a separate cup, mix almond milk with matcha powder, a drizzle of honey, and a splash of vanilla syrup. Pour the mixture over the chia seeds, stir well, and place in the fridge overnight to set.

Prepare the Matcha Chocolate Topping:
Melt white chocolate with cacao butter (or your choice of coconut oil, ghee, or butter) over low heat. Once melted, stir in some matcha powder and mix until smooth and vibrant.

Assemble the Layers:
Slice your fresh fruit. Spoon the chia pudding into a serving glass or bowl, and add a layer of fruit on top.

Add the Chocolate Drizzle:
Pour a little of the matcha chocolate mix over the fruit layer.

Repeat & Top It Off:
Add more fruit and your favorite toppings—granola, mixed nuts, seeds, and goji berries work beautifully. Pour the remaining matcha chocolate mix over the top.

Decorate & Serve:
Garnish with extra fruit for a beautiful finish.
