Raw Pad Thai from Kynd Community

Raw, easy, super healthy and delicious. This salad can be whipped together and served in bulk for a communal picnic or portioned out to make around four individual serves.

INGREDIENTS

2 cups carrot, julienned

1 cup red cabbage, thinly sliced

½ cup scallions, julienned

2 cups zucchini, noodles or julienned

1 cup bean sprouts

1 yellow capsicum, thinly sliced

1 red capsicum, thinly sliced

½ cup coriander

½ cup mint

⅓ cup cashews

½ cup creamy Creamy Asian Dressing (Recipe here )

Cashews, to garnish

Coriander, to garnish

METHOD

Combine all ingredients together in a large mixing bowl and drizzle with the Creamy Asian Dressing. Toss to coat.

Divide ingredients into 4 bowls and garnish with extra cashews and coriander.
