REFRESHING EDAMAME SALAD BY MAGDA
This yummy salad from Magda Magdas i light, crunchy and full of feel-good flavour, this refreshing noodle salad is the perfect warm-weather lunch. Packed with protein-rich edamame, fresh cucumber ribbons and a punchy miso-soy dressing, it’s quick, easy and seriously delicious.

INGREDIENTS
120 g noodles (cassava noodles recommended)
100 g edamame, cooked and shelled
2 spring onions, finely sliced
½ cucumber, shaved into ribbons
2 tsp miso paste
2 tbsp soy sauce or tamari
1 tsp sesame seeds
Chilli flakes and extra sesame seeds, to garnish
METHOD
Cook the noodles according to packet directions, rinse with cold water, drain well and add to a bowl.
Add the edamame, spring onions, cucumber ribbons, miso paste, soy sauce and sesame seeds.
Toss everything together until well combined.
Garnish with chili flakes and extra sesame seeds.
Serve immediately or chill for later.
