Rice Noodles with tempe, broccoli and tomato by Andrea Solomun

INGREDIENTS

50-200g of Tofu or Tempe breast (if you prefer a meat protein you can substitute here!) 

50-80g of rice noodles (or noodles or pasta of your choice!) 

1 small head of broccoli, cut into florets

Handful of cherry tomatoes, halved

Spices of your choice (garlic powder, chili flakes, dried oregano, etc.)

Olive oil or your preferred oil

METHOD

Boil salted water in a large pot. Add your noodles and cook according to package instructions. The secret to perfectly cooked pasta? Stirring occasionally and tasting a minute before the suggested time’s up.

While your noodles are cooking, bring a second pot of water to a boil and gently steam the broccoli until it’s vibrant green and tender (about 5 minutes). For extra flavour, sprinkle with a pinch of salt or drizzle with a little olive oil after steaming.

Coat a grill pan with oil using a paper towel to ensure an even, light coating.

Slice the tempe or tofu into thin strips. Season with your favourite spices – a mix of garlic powder, chili flakes, and dried oregano works wonders.

Toss the tempe (or tofu) in the hot pan and cook, turning until golden and crispy on all sides – about 5mins

Slice the cherry tomatoes into halves, releasing their juicy sweetness. Add them to your cooked turkey (or tofu) in the pan for the last minute to warm them up and let their natural sweetness shine.

Drain the noodles and toss them into the pan with your turkey, broccoli, and tomatoes. Let them all mingle and absorb the flavors. Give everything a good toss and serve!

Top with fresh herbs, a drizzle of olive oil, or a sprinkle of parmesan for an extra boost of flavor.
