RICE PAPER BLUEBERRY POP TARTS (QUICK & EASY) by Magda

If you’ve ever dreamed of a Pop Tart that’s crisp, light, and secretly kind of healthy this one’s for you. These Rice Paper Blueberry Pop Tarts come together in minutes, using just a handful of ingredients you probably already have at home. They’re golden, crunchy on the outside, warm and jammy in the middle… and yes, 100% as good as they sound.

Perfect for a quick breakfast, afternoon snack, or a weekend treat with the kids.

INGREDIENTS

4 rice paper sheets

A handful of blueberries (fresh or frozen)

1–2 tablespoons  Greek yoghurt or Coconut Yoghurt

A handful of chopped nuts (we love walnuts or almonds)

Optional: a drizzle of your favourite natural sweetener (honey, maple syrup, or agave)

METHOD

Soak your rice paper: Place one rice paper sheet on a plate and briefly soak it in warm water until it softens (only a few seconds).

Fill it up: Add a few blueberries, a spoonful of yoghurt, and a sprinkle of chopped nuts in the centre.

Fold: Gently fold the rice paper into a small rectangle or square — think mini Pop Tart style — tucking in the sides as you go.

Cook: Pan-fry on medium heat in a little coconut oil (or dry fry if you prefer) until both sides are crisp and golden.

Cool & enjoy:Let them cool for a few minutes, then bite in while they’re still warm and crispy. The blueberries will have turned gooey and sweet inside — perfection!

ALIVE TIP: Try swapping the blueberries for raspberries or banana slices, or dust your finished Pop Tarts with cinnamon or cacao powder for an extra treat.
