FRESH POMEGRANATE SALSA

🌿🍅 This delightful mix of juicy pomegranate, crisp capsicum, and zesty coriander not only tickles your taste buds but is also jam packed with health benefits. Packed with antioxidants, vitamins, and anti-inflammatory properties, the mighty pomegranate in this salsa promotes heart health, boosts immunity, and adds a refreshing twist to your dish. While chilli, capsicum, and pepper boost metabolism, aid digestion, and provide a powerful dose of vitamin C. This salad would make a stunning addition to your festive table spread – but it comes with a warning – it’s so fricken tasty you might not want to share it.

INGREDIENTS

1 pomegranate

1 green capsicum

1 chilli

4 cloves garlic, finely chopped

1/2 cup chopped spring onion

1/4 cup finely chopped coriander

1-2 limes

1/2 – 1 teaspoon coarse sea salt (We love this Keffir Lime Leaf Salt by Little Spoon Farms)

1/4 teaspoon fresh ground black pepper

Corn chips to serve

METHOD

Start by deseeding and chopping the capsicum and chilli. Place aside into a large bowl.

Remove seeds from the pomegranate and add them into the bowl.

Next add the garlic, onion, and coriander to the bowl.

Add the juice from the lime into the bowl. (If you’re using local Bali limes you may need to use 2!)

Mix well, adding salt and pepper to taste.

Et Voila – You can eat the salsa right away, but the flavours will develop and become more intense after an hour or two in the fridge!

Serve with corn chips, crackers or your fave crusty sourdough if you’re not GF!
