Marinated Eggplant, Microgreen Pea Shoots, Sun Dried Tomatoes and Avo Rice Crackers

It’s vegan, gluten free and made using whole ingredients and no added nasties. And do you want to know the best part? There’s no cooking or baking involved!
Eggplants should be a superfood – Did you know the vitamin & mineral content of eggplants is quite extensive. They’re a great source of vitamin C, vitamin K, vitamin B6, thiamine, niacin, magnesium, manganese, phosphorus, copper, fiber, folic acid, potassium, and more!
They are also fantastic for digestion due to their high fiber content! FIbre is crucial element to maintaining a balanced diet, is a great way to improve your gastrointestinal health. This means that when you’ve gotta go, eating eggplant regularly will help everything move along smoothly!

Assemble your ingredients. Slice and season your avocado.
Add the avo to your rice cracker, then top with sun dried tomatoes, marinated eggplant.
Season with your spices of choice (we used paprika.) Top with your micro greens!
