Rosemary Watermelonade

The perfect drink to kick your hydration levels up a notch. Impress your mates when they pop in for a drink and you up your water game and whip this delight out!

It’s basically Summer in a drink 😉

INGREDIENTS

4 cups chopped watermelon

1 cup fresh lemon juice or the juice of 6 fresh lemons

1/4 cup coconut sugar

2 tablespoons raw honey

4 cups water

2 sprigs fresh rosemary

METHOD

In a small saucepan, bring 2 cups of water to a boil with the coconut sugar. Stir occasionally to make sure the sugar melts. When it boils, stir in the raw honey. Then add in the rosemary and turn off the heat, letting the rosemary steep and set for about 30 minutes.Juice the lemons and strain to get rid of any seeds or pulp.Puree the watermelon in a blender. Add a splash of water if needed. If you’re serving the lemonade later, pour a little bit of the puree into an ice cube tray to make watermelon ice cubes. Put in freezer.Strain the rosemary water into a pitcher. Add in the watermelon puree and lemon juice.Fill the rest with water. Add in watermelon ice cubes if you made them.Pour and serve! If you’re really trying to impress, top off these drinks with a sprig of rosemary and some lemon.
